PALETA :: Farm-to-Table Meal Delivery

I love cooking. I love everything about it, the preparation, the smells, eating it, the organization, the calculations, well almost everything. Even though without fail I imagine myself as a finalist kicking butt on Bravo Top Chef or Gordon Ramsay’s Master Chef, I hate, despise, detest and abhor the clean up. Ick. Double Ick. So now imagine my delight when I had my gourmet farm-to-table meals not only prepared, but DELIVERED to my home from PALETA. I told y’all I am fancy. And, yes…that’s right, I’m talking about PALETA again, I love them. You’d be nuts not to go b-a-n-a-n-a-s over their plans.

And here is why…

PALETA makes you feel like a celebrity.

Yes, just call me Mrs. Fancy-Pants Standley from now on! Every morning, a cooler filled with freshly prepared meals for the entire day, including snacks, were delivered to my home. Not one thing was frozen! Everything was made right before the drop and kept cool with cooler bags.

The flavor, the flavor, the flavor. I have never had a meal prepared in my home, or anyone’s home for that matter, where the flavors exploded like the ones in PALETA meals! Each bite was like unwrapping the most gorgeous birthday present, you had no idea what was on the inside, but you knew it was all you could’ve dreamed of.

 

PALETA allows you to freeing up and gaining hours.

Generously factor in 30 minutes to hit the market, 15-minutes for prep, 25-minutes to cook, 30-minutes to clean up. Grand Total: 1 hour and 40 minutes. And that was only for dinner! Now add 10-minutes for breakfast prep and 10-minutes for lunch prep. Revised Grand Total: 2 hours x 5 days = 10 hours. WHAT WOULD YOU DO WITH 10 EXTRA HOURS A WEEK? Yoga? Watch your favorite TV show? Call a friend? Play with your child? Read a book? Talk to your husband? One thing is for sure…10 extra hours a week is worth the cost of food!

 

PALETA prepares foods you might normally not cook for yourself.

Sure it is about being adventurous; however PALETA doesn’t do it in a scary way! For example, I just happen to never buy pine nuts or golden beets. I have nothing against pine nuts or golden beets, I just had always passed them up while at Whole Foods. Wow…PALETA added pine nuts, and raw golden beets. Guess who is HOOKED now on raw golden beets? This chick right here!

Meatless Mondays | Breakfast – Steel cut oats with toasted walnuts & strawberries :: Lunch – Spring lentil salad with mixed baby greens and dijon vinaigrette :: Dinner – Brown rice vegetarian lasagna with green beans and red onion vinaigrette :: A.M. Snack – Neapolitan gluten free vegan cookie with red grapes :: P.M. Snack – Fresh carrot sticks with sunflower seed butter.

PALETA gets you to rediscover foods.

John Mayer once said to me, (yes, be careful not to trip on that name I just dropped there…,) that one of life’s most important simple gifts was rediscovering music. Something you forgot about it, or maybe you just didn’t connect with in the beginning, but when you needed it most, it appeared. This is true for food as well. I remembered Steel Cut Oats. I know it sounds silly, but the joy, energy and clear mind it gave me that morning combined with fresh fruit was something I had always passed up before. Now, it is my favorite way to start the day.

Ruby Tuesday | Breakfast – Baked orange french toast casserole, with breakfast sausage links, maple syrup and citrus salad :: Lunch – Tarragon chicken salad, sweet peas, honey crisp apples, celery, toasted walnuts, creamy tarragon dressing and gluten-free rice crackers :: Dinner – Seared scallops, sweet cucumber and mango salsa, broccolini and sesame jasmine rice :: A.M. Snack – Rhubarb crumb bars with fresh strawberries :: P.M. Snack – Chicken vegetable potstickers with low sodium tamari (not shown.)

Your body will thank you for PALETA.

Sooner than you think, you’re body will feel a major difference. Your skin will glow, the whites of your eyes will be brighter than the sun, your taste buds will be doing backflips. Not to mention, your family and friends will noticed a more relaxed and pleasant you because you’ve had 10 extra hours this week to enjoy everything from ‘Me Time’ to laundry.

Day Three (Wednesday) | Breakfast – Flatbread with sunnyside-up organic egg, turkey sausage, mushrooms and spinach :: Lunch – Salmon with brown sugar mustard glaze, turkey bacon, braised collard greens and brown rice :: Dinner – Free-Range turkey tangine, curried eggplant and moroccan couscous :: A.M. Snack – Melon salad with raw almonds:: P.M. Snack – Romaine, radicchio, and endive salad with dijon vinaigrette.

 

PALETA is taking care of you!

We always neglect ourselves because we’re concerned about our kids, family, husbands, friends, you name it. Before we know it, it’s almost midnight and only a few hours before it’s time to do it all over again. Allow PALETA to take care of you. You deserve to be spoiled. It’s nice to have someone know what you need without you even having to tell them. To just know that when you wake up, a big part of your day is taken care of.

Day Four (Thursday) | Breakfast – Whole grain English muffin sandwich with spicy ketchup and a mini smoothie :: Lunch – Fresh tomato basil soup with escarole, apple and raw golden beet salad with garbanzo beans and fava beans :: Dinner – Parmesan and sage crusted pork chops with polenta wedges, asparagus and mushrooms :: A.M. Snack – PALETA brown rice crispy treats with fresh clementines and grapes :: P.M. Snack – Toasted sesame snap peas with sea salt (not shown).

 

You will be so sad when your PALETA meal deliveries are over.

You will be sad, your husband will be sad, and so will your kids. You knew the time was going to eventually come, but it sneaks up on you like the end of a great vacation. Don’t be sad though, because next season, a whole new selection of fruits and vegetables will be ready to grace your dinner table! And for the record, my husband said it was the best chicken he has ever tasted. Friends, that speaks volumes.

Thai Tofu Satay + Spicy Peanut Sauce

Thai Tofu Satay + Spicy Peanut Sauce

Ingredients

  • Tofu:
  • 1 ¼ lbs firm tofu, cut into 1” cubes
  • 2 red bell peppers, cut into 1” pieces
  • 1 red onion, sliced into 1” pieces
  • 3 T oz sesame seeds (garnish)
  • Marinade:
  • ¼ onion
  • 3 cloves garlic, smashed
  • ¾ tsp cayenne pepper
  • 2 ½ tsp ginger, chopped
  • ¾ tsp turmeric, ground
  • 2 ½ tsp coriander, ground
  • 2 ½ tsp cumin, ground
  • ½ c low sodium soy sauce
  • ¾ c brown sugar
  • ¼ c vegetable oil
  • S&P
  • Spicy Peanut Sauce:
  • 1 ½ c smooth peanut butter
  • 1 T low sodium soy sauce
  • 1 T brown sugar
  • 2 T lime juice
  • 1 T rice wine vinegar
  • 2 t hoisin sauce
  • 1 t hot sauce (sriracha)
  • 2 t fresh ginger, grated
  • 1 t sesame oil

Instructions

  1. Press the tofu to drain excess liquid. Place in a mixing bowl and set aside.
  2. Puree marinade ingredients in a food processor or blender to create a dark, rich Thai marinade.
  3. Taste-test the marinade for salt, spice, and sweetness.
  4. Note: with this marinade, you should first taste SALTY, followed by SWEET and then SPICY. Add a little salt if needed, or more sugar to sweeten, or more cayenne to add heat.
  5. Pour marinade over the tofu to coat. Add the bell pepper pieces and onion wedges and gently turn in the marinade together with the tofu.
  6. Set in the refrigerator to marinate at least 1 hour, or cover and leave to marinate up to 24 hours.
  7. Thread the tofu, bell pepper, and onion onto wooden or stainless-steel skewers (soak wooden ones in your sink 10 minutes beforehand to prevent burning). Retain the bowl with the leftover marinade for basting.
  8. Lightly brush grill with oil, then set skewers over the fire. Grill until tofu and vegetables are lightly browned. As you grill, baste with leftover marinade. If desired, sprinkle some sesame seeds over each satay stick after basting.
  9. Serve with Spicy Peanut Sauce and Brown Jasmine Rice. ENJOY!
  10. Combine all ingredients in blender. Add water to get desired consistency. Add Sriracha for more heat if you like! Serve in a dipping bowl.

    • Their delivery service is off the hook phenom; however if you want to shed a few LBS, you have to try their pressed juices. Oh my ham sandwich, they are the best tasting and you’ll shed. I promise you’ll see angels!

  11. How colorful and healthy do all those meals look?? OK dying to do this! I wish they had it available in Singapore. I’m going to do some research to see if there is something similar there. Good for you for keeping this up!
